Description The diced celery shall be individually quick frozen so that the frozen units shall be free flowing. The diced celery shall be free from foreign material or extraneous matter and practically free from defects such as leaves, butt ends/roots, pathological defects, mechanical damage, and discolored pieces. The IQF diced celery shall contain no ingredients (such as salt or firming agents) other than diced celery. The texture of the IQF celery shall be typical of blanched celery, tender, crisp and practially free of objectionable tough stringy or pithy units.
The product shall be prepared from fresh, clean celery. Celery used shall have normal bright green to white color with the amount of white pieces not exceeding the amount normally found in field run celery. The celery used shall be cleaned, washed and placed on a double cut saw as to remove all roots and extremely fibrous stalk from the butt end, and all major leaves from the leaf end. Inside and outside stalks should be used (outside stalks are preferred for color). After trimming, the stalks are diced into 3/8" pieces, blanched, drained, sorted, frozen and stored under conditions necessary to properly preserve the quality of the finished product.

Polyliner in corrugated fiber cases containing 45 lbs. free of dirt, foreign matter or adulterating substances.
